Asparagus Goat Cheese Quiche
As the gluten-free diet has been tarnished publicly as being one of the “worst fads in 2013″, let’s show those hating on our way of living that there are some pretty cool aspects to it! It’s neither a fad nor all bad and some (like myself) would argue that this way of living is pretty darn awesome.

  1. Preheat oven to 350°F. Prepare a 12-cup muffin pan by spraying with non-stick baking spray or
  2. Brushing with oil. Set aside
  3. In a medium bowl, whisk together eggs, egg whites, water, sea salt, and nutmeg until combined.
  4. Pour egg mixture into each cup, filling about 3/4 full.
  5. Divide prepared caramelized onion, asparagus, and goat cheese evenly among muffin cups.
  6. Place muffin pan in oven, baking for 18–20 minutes, until tops of quiche cups turn golden brown.
  7. Cool in pan for 5–8 minutes before running a butter knife along the sides of each cup to loosen.
  8. Serve and enjoy!

How to Caramelize an Onion: Caramelized onions are my jam. I love them on top of a veggie burger, stuffed inside an omelette or simply straight out of the pan. Want to make your house smell like heaven?

  • 3 Tablespoons salted butter
  • 1 whole yellow onion, thinly sliced
  • 1/4 teaspoon sea salt
  • 1 Tablespoon granulated sugar

Heat butter in a medium pan over low heat. Add onion and sea salt, frequently stirring for 30 minutes. Sprinkle sugar on top of onion mixture, cooking for an additional 15 minutes, stirring consistently throughout. Remove from heat and serve.
