Apple Cinnamon Donut Bread Recipe
As the holidays near, I would like to share a few of my favorite recipes that I’ve made for friends and family. Though I do my best to eat healthfully most of the time (say 80%), there’s nothing like a delicious dessert that everyone at the party can indulge in regardless of food sensitivities, right?

  1. First mix the flour, other dry ingredients, and hard coconut oil together in a large mixing bowl. Once you have a crumbly flour mix, add the coconut milk and continue mixing with a spatula or spoon. You’ll end up with a sticky batter that will kind of resemble a biscuit mix batter. Add the apple to the batter & combine.
  2. In a separate bowl, mix together the melted oil or Earth Balance spread with the sucanat and cinnamon to get a gooey mix.
  3. Go back to the batter and roll all of the batter into small balls (think donut holes) and place them in the bottom of a funnel cake or bundt pan. Then pour the gooey filling over top the batter. You will probably need to mix the batter balls a bit with the filling in the pan so that everything gets coated. Ultimately you are toss the batter balls and the filling together in the pan so that they can all bake up together nicely. It will taste good no matter what it looks like.
  4. Bake at 375 degrees for 30 minutes. This bread or cake, will serve up to 8 people.
